Summertime Chicken with Spinach

Fresh SpinachIn deliberating this week’s recipe, I wanted to incorporate something seasonal…something simple…so with the veggies of summer starting to ripen, I suggested creating a Chicken and Spinach dish.  Gina said it was “boring” and told me she’d get back to me on snazzing it up…and I’ll give her some credit on this one…she did!

All I could say is, “Wow!”  This wonderful recipe takes about 40 minutes to prepare and cook, but guests or family will think you are a professional chef after they have a taste!  Instead of using the chicken breasts, I used chicken tenders as I figured they would be easier as they are pre-cut.  I also chose to use a can of diced tomatoes this round, but I will definitely make it again with the chicken prepfresh vine ripe tomatoes.  This is an excellent dish and a highly recommended meal for even the newest of “chef’s” out there!

spinach…going…going…gone!

This is such a light, fresh, summery dish, that it was perfect that we were experimenting with this during the “supermoon” weekend and beginning of the summer solstice.  We liked it so much at my house, that I actually made it twice this week!  For the first try, I made it exactly as described below and almost had a panic attack over the volume of raw spinach and how it would ever fit in the pan…but be patient…the leaves will wilt, and all will be right in the world…or at least your kitchen!  The second time, I remembered the basil in my garden, so I cut ~5 basil leaves and used fresh instead of dried.  I also accidentally bought chicken tenders during my Costco run, so I used IMG_5486those instead of chicken breasts…this eliminated the halving step, so it was a little bit of a time saver. Both versions came out great.  A squeezed wedge of lemon over the top of the plated dish is perfect to give the dish a little extra zip!

Other than giving Popeye big muscles, spinach is a great source of nutritional goodness…packed with antioxidants, iron, calcium, and other vitamins, it’s safe to say you should have seconds!

 

Summertime Chicken with Spinach

Ingredients
  • 2 Tbsp olive oil, divided
  • 1½ Tbsp garlic
  • 1 onion, chopped
  • 3 medium vine ripe tomatoes, seeds removed
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp jarred, seedless capers, drained
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • 4 chicken breasts
  • 9 oz bag of fresh spinach
  • Salt & Pepper (to taste)
Instructions
  1. Using a non-stick skillet, heat 1 Tbsp oil. Add garlic and the onion. Sautée until onions soften. Remove from heat.
  2. Place sautéed onions & garlic in a bowl and add tomatoes, lemon juice, capers, parsley, basil, and oregano. Salt and pepper to taste. Set aside.
  3. Halve each chicken breast horizontally (cut them parallel to the counter); cover with saran wrap and lightly pound each cutlet with a meat mallet until ~1/4" thick. In a pinch, you could also use a skillet or rolling pin. Season to taste with salt & pepper.
  4. Using the same skillet, heat remaining 1 Tbsp olive oil over medium heat. Add chicken and cook until done - browned and opaque throughout, about 2-3 min per side.
  5. Remove chicken from heat, set aside on a plate, and cover loosely with foil.
  6. Add the tomato mixture back to the skillet. Bring to a boil, then reduce heat and simmer for 2 minutes. Add spinach and cook until it begins to wilt, about 2 minutes.
  7. To serve, plate chicken, top with the tomato/spinach medley, and garnish with a wedge of lemon.
